Day 32

So yesterday we had our 1 month physio-graph. Here's the results from last time:
1. Body Weight 243 lbs
2. Body Fat 125 lbs

Yesterday's showed this:
1. Body Weight 223.5 lbs, which is a 10.5 lb weight loss
2. Body Fat 118 lbs, which is a 7 lb weight loss
My other weight loss was from fluid. Who knew all those white carbs made me so puffy with excess water?

I am happy with my weight loss but I know I can do better. I know what I need to do, so just wait until next month's physio-graph!

I do want to mention how proud I am of all the other gals. Yesterday one of the gals was not able to be there, so there was only 5 of us. But with just us 5, we lost over 50 lbs of body fat! It is nice that we are all so supportive of each other. We all want to win. I I really think that who ever wins, there will be no hard feelings from the other gals. We have all become pretty good friends. We joke, laugh, encourage, and chat during our workouts. We support each other on Facebook. It's just so wonderful!

A couple of days ago I had this dream that I was almost to my goal weight. Wow! It was amazing to see myself like that. I almost did not want to wake up. I will get there....I will get there....I will get there!

Day 30

So, today my husband said "Let's go eat at a pizza buffet for lunch.". I said, "Let me weigh myself first." So I did. If my scale was right, I am down 12 pounds! Whoo-hoo!!! Of course, I told him he was crazy. I wasn't going to eat pizza. So, instead we ate a lot of veggies for lunch! (smiling)

My husband has been very supportive when it comes to eating better. Giving up diet soda has been really hard for him. He hasn't given it completely up, but he has gotten much better. He drinks tons of water with me. He's been trying more vegetables and has been eating much more fruit than before.

So, he got on the scale after I did and he had lost 13 pounds. Pretty good for a guy who hasn't completely changed his life. I was so happy with him.

It's nice to have support from family, especially from the ones that you see daily....the ones who eat with you....who cook with you....who grocery shop with you.

I did complain the other day that it would be nice if we could get out and walk or do some exercising together. So, today after our healthy (not pizza) lunch, he suggested we take a walk.

Thank you Hubby!!! I love you!!

Delish Oatmeal

Add all ingredients to your oatmeal. Or you can add them and then cook them.

1 tbsp chopped pecans
1 tbsp chopped walnuts
1 1/2 tsp honey
1 tsp ground flaxseed
1/8 tsp cinnamon

Hamburger

1 egg
1 lb lean ground beef
1/2 cup rolled oats
1/3 cup diced onion
1/2 cub chopped spinach
2 tbsp shredded reduced-fat mexican-blend cheese
salt and pepper

1. Whisk the egg in a large bowl. Add everything else and mix-your hands are the best tools-until well-blended. Form into 4 patties.

2. Please the burgers on a grill over medium-high heat. Cook 4-6 minutes per side or to your desired level of doneness.

Serve on whole wheat burger buns (we had ours on whole-wheat sandwich thins) and top with lettuce and tomato slices.

If you have any extra burgers, wrap them in plastic and freeze for later.

Root "Fries"

My hubby who doesn't like veggies, really enjoyed these!

4 large carrots, cut into matchsticks
4 large turnips, cut into matchsticks (my hubby got parsnips instead and it turned out great!)
1 tbsp extra-virgin olive oil
salt and pepper
1/2 cup croutons
1/3 cup grated Parmesan cheese
1/2 tsp garlic powder

1. Preheat oven to 425 degrees F. Coat a baking sheet with cooking spray.

2. Mix the carrots, turnips, and olive oil in a bowl. Season with salt and pepper.

3. Dump croutons into a resealable plastic bag. Close the bag and crush the croutons with something heavy to transform them into crumbs.

Add the Parmesan and garlic powder. Working a handful at a time, add the matchsticks to the bag and shake to coat. Pick the matchsticks out and place on the backing sheet.

4. Bake until tender, 15-20 minutes (depending on how thick you cut your veggies). For crispier fries on all sides, turn the matchsticks 1/2 through cooking.
